It's been a crazy winter. Lots of cold and ice have made us want to be done with it all and move on to spring. Since it hasn't warmed up enough for that yet, we've got some cold-weather dishes with some spring-inspired ingredients to bring you the best of both worlds.
Ricotta & Spring Pea Appetizer - a homemade herbed ricotta tops a toasty crostini, with a pretty podded peas adorning the top
Orange & Herb Roasted Steak - rosemary, orange zest, and garlicky bread crumbs envelop the tender medium rare flank steak, We'll serve it sliced thin with amazing little rounds of compound butter to melt onto each delicious serving.
Risotto with Spring Vegetables - The best that spring has to offer in one fabulous risotto. Peas, asparagus, and pesto make this dish a gorgeous spring green-something we're all ready to see at the end of winter.
Springtime Salad -Bright and colorful, dressed with a creamy bagna cauda dressing that's usually reserved for dipping crudites. You'll find some grilled garlic croutons and some boiled eggs with their pretty yellow yolks that all add depth to this wonderful salad.
Vanilla Gelato with ? - We're not telling---at least not until you taste it! So delicious with a rather odd smattering of ingredients that top it. Nothing weird, just an unusual combination! All class participants will get a chance to guess what the ingredients are --- and maybe win a little prize!
